"When you eat ital, you're eating naturally," explains New York City–based ital chef Troy Levy. "It's about making food your medicine, and your medicine your food. As Rastas, we try to live as one with earth."

Ital cuisine is characterized by its emphasis on whole, unprocessed plant-based foods, eschewing added sugar, oil, and salt. This approach is rooted in the Rastafari belief that the body is a sacred temple that must be treated with the utmost care and respect. By consuming only the most nourishing and life-affirming ingredients, Ital practitioners strive to maintain a state of physical, mental, and spiritual well-being. "It's a more natural way of doing things," Levy explains. "All the sweetness that you need comes from fruits and vegetables; you don't have to overdo it."

Ital vs. Vegan: Distinguishing the Differences

While Ital and veganism share a plant-based foundation, Levy is quick to differentiate the two. "I try to separate Ital and vegan because when you're talking about vegan food, there may be a lot of artificial flavoring and coloring to make things reminiscent of meat—like a vegan chicken or a vegan beef. When it comes to Ital, we usually try to use just plants." This emphasis on whole, minimally processed ingredients is a hallmark of the Ital approach, setting it apart from the more commercially-driven vegan movement.

A Lifelong Journey: Levy's Personal Ital Odyssey

Levy's own path to Ital was a gradual one, rooted in his upbringing in Jamaica. "I had a 50/50 lifestyle growing up. My grandmother and mother cooked meat. But my Rasta uncles, who were always visiting, would cook Ital food, and I started loving that more." It wasn't until Levy moved to the United States and experienced the negative health effects of a standard American diet that he fully embraced the Ital lifestyle. "I started eating so much of it. I gained so much weight that when I went back to Jamaica, my uncle asked me, 'What are you doing to yourself in America?' I had to wean myself off of the fast food."

Sharing the Ital Tradition: Levy's Global Culinary Journey

Inspired by his Ital roots and the desire to share this transformative way of living, Levy embarked on a culinary journey that has taken him around the world. In 2017, he decided to leave the restaurant industry and start his own Ital pop-up events, aptly named "Taste of Ital." Through these events, Levy has had the opportunity to introduce people to the principles and practices of Ital cooking, from Zanzibar and Tanzania to South Africa and beyond. "People really love it," he says. "It's given me the opportunity to echo what the Rastas have been always saying about taking care of your vessel and all that good stuff. People have been really receptive to it."
