Ingredients

  • 2 pound medium green (unripe) tomatoes or firm heirloom green tomatoes

  • 1 tablespoon sugar

  • 1 teaspoon flaked sea salt or kosher salt

Directions

  1. Core tomatoes; slice crosswise into 1/4-inch slices. Sprinkle with sugar and salt. Arrange tomato slices in a single layer on mesh-lined dehydrator trays.

  2. Dehydrate at 135°F for 5 to 6 hours or until leathery but not brittle. Remove tomato slices as they finish drying while allowing the remaining slices to continue drying. Let cool completely.

  3. Store cooled, dried tomatoes in an airtight container at room temperature up to 6 months.
